Shrimp Fajitas

Shrimp Fajitas Resized

Ingredients

– 2 tbsp Blended Oil Mixture

– 14 ea Shrimp (cleaned, deveined, tail off 26-30)

– 1/2 ea Green, Yellow, and Red Bell peppers (sliced)

– 1/2 ea Red Onion (sliced)

– 1 tbsp Chives (finely sliced)

– 2 ea Xtreme Wellness Spinach & Herb Tortilla

– TT Salt & Pepper

– 1 tbsp Sour Cream (optional)

BLENDED OIL

– 1/2 c Oil

– 1/2 ea Lemon juiced

– 4 ea Chile Arbol, dry

– 3 ea Garlic

Blend all ingredients until fully blended.

Directions

1. In a large pan on medium heat, add the blended oil mixture. Let heat one minute. 

2. Add shrimp and season with salt and pepper to taste. Cook for approximately 3 minutes. 

3. Raise heat to medium-high and add all vegetables but the chives. Cook for another 2-3 minutes.

4. Heat up a separate pan on medium. Warm up the tortillas.

5. Split the shrimp fajitas equally into two tortillas.

6. Fold the tortillas and garnish with chives.

7. Add sour cream (optional).
