Ingredients

– 4 ea Xtreme Wellness Plant base Protein Plus Tortilla

– 1 tbsp Butter, unsalted

– 3 ea Eggs Whole (can sub with 9 tbsp Egg White)

– 1/4 c Kale Chopped

– 1/2 c Mushrooms Sliced

– 1/2 tbsp Onion (finely chopped)

– 1 tbsp Tomato diced

– 1/4 ct Cheese (blend shredded)

– 2 ea Turkey Links (chopped)

Directions

1. In a small bowl beat the 3 eggs until completely mixed. 

2. Heat a pan on medium heat. Add sausage links and brown on all sides. Set aside.

3. Add 1/2 tbsp butter to the pan. Add onions, kale, mushrooms, and tomato. Cook until translucent.

4. Add beaten eggs. Mix with a spatula until fully cooked. 

5. Add chopped turkey links and cheese. Mix well.

6. On a separate large pan on medium heat. Melt the rest of the butter and place tortilla to heat and color until golden.

7. Add a 1/4 of the cooked mixture to each of the tortillas. Fold the tortillas, let toast a little on each side before plating (approximately 1 minute on each side).
